Ingrédients de Eclair au chocolat au thermomix

  • 400 grammes de chocolat noir
  • 125 grammes de beurre non salé
  • 250 grammes d’eau
  • 200 grammes de farine
  • 20 grammes de levure
  • 10 grammes de levure chimique
  • 4 œufs

Préparation des éclairs au chocolat au thermomix

  1. Pour commencer la préparation de ces Eclairs Chocolat au thermomix, versez de l’eau et du beurre dans le bol du Thermomix, programmez.
  2. 4 minutes / Température 100° / Vitesse 1.
  3. Pendant que l’eau chauffe, recouvrez une plaque à pâtisserie de papier antiadhésif et préchauffez le four à 200°C.
  4. Une fois l’eau chaude, ajoutez la farine avec la levure et programmez à nouveau.
  5. 1 minute / Température 80° / Vitesse 4.
  6. Avoir tous les ingrédients mélangés à nouveau programmer, mais cette fois sans température pour que la pâte refroidisse.
  7. 7 minutes / Pétrir.
  8. Lorsque la pâte est déjà descendue en température, ajoutez les oeufs (au thermomix dessus et par l’ouverture de la tasse) un par un, programmez.
  9. 1 minute / Vitesse 5.
  10. Avec cette technique vous obtiendrez une pâte très légère et collante donc vous ne pourrez pas la manipuler avec vos mains, pour façonner les éclairs utilisez une poche à douille ou parfaitement une cuillère.
  11. Déposez-les sur la plaque recouverte de papier antiadhésif et enfournez à 180°C pendant 20-22 minutes ou jusqu’à ce qu’ils soient gonflés et dorés (tout dépendra de la taille et de l’intensité de votre four).
  12. Une fois doré, retirer du four et laisser refroidir.
  13. Pendant qu’ils refroidissent, à nouveau dans le bol du Thermomix, une fois lavés et séchés. Couler le chocolat noir en morceaux, programmer.
  14. 5 minutes / Température 50° / Vitesse 1.
  15. Pour finir, versez le chocolat fondu dans un petit bol ou un verre et trempez la moitié de la pâte Lightning dans le chocolat fondu et laissez reposer quelques minutes.
